Pass the healthier fried food

 

Ashland scientists have figured out how to keep fried foods looking and tasting great while reducing the oil uptake by up to 50 percent.

In deep-fat frying, our Benecel™ MC or HPMC forms a barrier that will hold out oil while retaining moisture. In addition to fewer calories, the food will have lower fat content, a characteristic associated with lowering obesity and avoiding heart disease.

Foods such as potato croquettes and onion rings will also hold together better during frying, so they appear more appetizing and leave less debris in the oil.
